Oat Banana Mini Muffins for Babies

These small oat-and-banana muffins use a ripe banana for moisture and egg to hold the mixture together. A fully cooked centre matters more than a fixed baking time; avoid dry or crumbly results.

Ingredients

  • 1/4 cup (about 20g) plain rolled oats, blended into fine oat flour
  • 1/2 very ripe banana, mashed
  • 1 egg
  • A little water only if the mixture is too thick

Preparation

  1. Preheat the oven to 175°C (350°F) and lightly grease or line a mini-muffin tin. Blend oats into fine oat flour; mash the banana thoroughly.

  2. Beat the egg and stir in the mashed banana and oat flour until evenly combined. Let stand briefly to hydrate. The batter should be spoonable; add a few drops of water only if necessary. Divide among mini-muffin moulds without filling to the brim.

  3. Bake, beginning to check after about 12 minutes, until the centres are fully set and an inserted food thermometer reads at least 71°C (160°F) for an egg-containing dish. Cool completely; split one muffin to check for wet batter and a dense or tough texture before serving.

Serving by Age

Offer a moist soft strip cut from a thoroughly cooked muffin or crumble into a mash, depending on feeding skills. Avoid dry, crumbly or hard mini-muffin rounds and supervise eating.

6 months+

Split into soft moist strips or crumble into a mash as appropriate; do not offer a dry firm mini muffin whole.

9 months+

Offer soft pieces suited to chewing skills, checking the centre is fully cooked and moist.

Allergen Information

Contains egg, a major allergen. Pure oats are not wheat, but oats may have wheat, barley or rye cross-contact; check the exact package, especially for wheat allergy or coeliac disease.

Storage

Cool completely and refrigerate untouched baked muffins promptly in a covered container. Reheat thoroughly if desired and cool before serving; discard pieces left from baby's meal.
